I got this recipe from my friend Coral Lee Findlay when we both lived in Elko, NV. We had a homemaking meeting with all Zucchini recipies - Yummy! This cake is one of my favorite of all time - kind of like a carrot cake. I shred zucchini and freeze it so that we can enjoy some of these recipes all year long.
Zucchini Cake
from Coral Lee Findlay
2 cups sugar
2 cups chopped zucchini
1 1/2 cups oil
3 eggs
1 c. crushed pineapple
1 tsp. vanilla
1 tsp. soda
1 tsp. salt
1 tsp. cinnamon
2 c. flour
1 cup chopped walnuts
Mix first six ingredients, then mix last five ingredients gradually to the first mixture. Bake at 325 for one hour in a greased 9x13 inch pan.
Frosting:
1/2 cup mayonnaise
8 oz. cream cheese
2 1/2 cups powdered sugar
