Baking Powder Biscuits

2 cups flour
3 tsp. baking powder
5 T. shortening
1/4 tsp. salt
1/4 cups sugar
3/4 cup milk
Sift together in a bowl, baking powder, flour, salt, and sugar. Add shortening and cut in flour mixture until fine and add milk(should be moist). Drop by onto greased cookie sheet. Bake at 400 for 10 minutes.

8 cups flour
Beat eggs. Add other ingredients. Roll out about 1/4 inch thick. Bake at 400 until just golden around the edge.

Hot Mustard

1/4 cup dry mustard
1 1/2 T. cornstarch
1/2 tsp. salt
1/4 cup sugar
2/3 cup water
1/3 cup vinegar
Mix mustard and a little water; let set in a bowl. Mix cornstarch, salt, sugar, and water till smooth, then add vinegar. Cook over low heat for 5 minutes or till boils. Remove from heat; let cool. After cooled, add mustard and mix well.

Zucchini Cake
I got this recipe from my friend Coral Lee Findlay when we both lived in Elko, NV. We had a homemaking meeting with all Zucchini recipies - Yummy! This cake is one of my favorite of all time - kind of like a carrot cake. I shred zucchini and freeze it so that we can enjoy some of these recipes all year long.

1 1/2 cups oil

1 c. crushed pineapple
1 tsp. vanilla
1 tsp. soda
1 tsp. salt
1 tsp. cinnamon
2 c. flour
1 cup chopped walnuts
Mix first six ingredients, then mix last five ingredients gradually to the first mixture. Bake at 325 for one hour in a greased 9x13 inch pan.
Frosting:
1/2 cup mayonnaise
8 oz. cream cheese
2 1/2 cups powdered sugar

Be sure to burn the last batch - I always do. Pepper & Rowdy love the crunchy ones!

No Bake Cookies
These are super easy and really yummy:)
2 c. sugar
1/2 c. milk
1 sq. butter
3 T. cocoa
1/8 tsp. salt
1 tsp. vanilla
3 c. oatmeal
1/2 c. nuts
1 c. coconut
Bring first 5 ingredients to a boil, stirring. Remove from heat. Stir in next 4 ingredients.
Chewy Brownies
These brownies are the BEST!:) YUM!!
1 c. butter, melted
2 c. sugar
4 eggs
1 tsp. salt
1tsp. baking powder
1/2 c. cocoa
1 1/2 c. flour
1 c. nuts (optional)
Melt butter in mixing bowl. Add other ingredients. Mix well. S[read in greased 9 x 13 pan. Bake at 350 for 30 min.
Unless you really love nuts, don't add them....they are so much better without:)
Sour Cream Enchiladas
I haven't actually tried this one, but my brother called and requested the recipe. It is from a homemakers club that my mom belongs to. They started a cookbook years ago & we all have a copy - they are getting worn out! I love the old collections put together - real home cookin'!

2 cans cream of mushroom soup
1 c. sour cream
2 c. grated cheese
1 c. chopped onion
12 corn tortillas
3/4 lb. ground beef (cut-up chicken is also good)
Soften tortillas in oiled frying pan. Lay in cake pan. Add to one tortilla, 2 teaspoons sauce, 1 teaspoon onion, 2 tablespoons cheese and 1 tablespoon cooked meat. Roll tortilla and place on side in pan. Fill pan in same manner. Pour remaining sauce over entire pan. Top with the remaining cheese and bake for 1/2 hour at 350.

The Best Chicken Salad/Sandwich stuff Ever!! :)

24 oz. (3 C.) cooked chicken, shredded (I use 2 cans of chicken and it works great!)
1 package slivered almonds
2 c. grapes, sliced
1 c. celery, chopped
2/3 c. mayo (I use light)
1 carton lemon yogurt (6-8 oz.)
1 tsp. mustard (prepared)
1 T. minced onion
2-3 good shakes garlic salt
..
Put chicken, almonds, grapes and celery in bowl. In seperate bowl, combine and mix mayo, yogurt, mustard, minced onion and garlic salt. Stir sauce into chicken mixture. Mix well. Serve on rolls, bread, or croissants. Refrigerate leftovers (if you have any). YUMMY!!!

Spanish Rice (Tomato Rice)

I've been trying out random recipes
off of the internet so I can use my pantry more,
(plus I'm sick of everything else)

and I found this rice recipe I liked:
Spanish Rice
Yield: 3 servings (serving size: 1 cup)
Ingredients
- Vegetable cooking spray
- 1 cup uncooked instant rice
- 1 cup chopped onion
- 2/3 cup diced green bell pepper
- 1/2 teaspoon prepared mustard
- 1/4 teaspoon pepper
- 1 (14.5-ounce) can whole tomatoes, undrained and chopped
- 1 (5.5-ounce) can tomato juice
Preparation
Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot. Add rice, onion, and bell pepper; sauté 5 minutes. Add remaining ingredients; simmer, uncovered, 5 minutes or until liquid is absorbed.
Because I had so much, I've had to
eat it a few times. So, I changed it up
a bit by adding chicken and olives.
It will just depend on what you like! :)
(P.S. it's basically tomatoes and rice
...but still really good)

Homemade Tomato Soup
I've been wanting to try this one for a while now - maybe this weekend with the snow still coming.
The Best Tomato Soup
- 4 tablespoons of olive oil
- 1 medium onion (about 1 cup) - chopped
- 2 cloves of garlic (about 2 teaspoons) - minced or crushed
- 2 cans of whole tomatoes packed in juice (I used two quart jars of whole canned tomatoes from our garden)
- 1 tablespoon of brown sugar
- 3 slices of large sandwich bread (crusts removed and cut into 1-inch pieces)
- 2 cups of chicken stock
Heat 2 tablespoons oil in large pot over medium-high heat until it is shimmering
Add the chopped onion and garlic and cook, stirring frequently, until the onion is translucent, about 3 to 5 minutes.
Stir in the tomatoes and their juice. Using potato masher, mash until no pieces bigger than two inches remain.
Stir in brown sugar and bread; bring soup to a boil, stirring occasionally, until the bread is completely saturated and starts to break down, about 5 minutes. Reduce heat to medium.
Transfer half of soup to blender.
Add one tablespoon oil and process until soup is smooth and creamy, 2 to 3 minutes. Transfer to large bowl and repeat with remaining soup and oil.
Return the soup to the pot and add two cups of chicken broth. (or add enough to reach desired consistency)
Season to taste with salt and pepper.

It's kind of cool stuff!
Ingredients:
3 Tbsp water
1/3 cup sugar
1/3 cup popcorn kernels
¼ tsp salt
Directions:
Pour water and sugar in Sponge cake mold and swirl around until mixed together well. Cook in microwave for 2 minutes on high. Add popcorn kernels to hot sugar syrup and swirl around again to coat all the popcorn. Place the Octagonal silpat on top of the Sponge cake mold and cook for approx. 3 minutes on high. Be sure to listen to the popcorn and as soon as it stops popping remove from microwave (this will burn if left in too long). Quickly sprinkle salt while stiring.

Slow cook the roast overnight. In the morning, pull it apart and add the picante sauce and brown sugar. Then put it back in the cooker and simmer for several more hours. Done - yup it's that easy & that yummy! You can serve it on a bun, or it tastes a lot like the Cafe Rio pork that we always get on the salad.

Mom's Raisin Cookies
Mom has been promising to make me some raisin filled cookies for a while - Yummy - I haven't ever tried to make these ones on my own. She mixed up a batch for the Christmas party. I've been craving one for quite a while.
Grandma at work
They tasted just as good as I remember - Mom gave us a book of Grandma Hansen's recipies with some histories for Christmas. That was a great present ~ now I quess I'll have to try making them myself.
Walking Tacos
Just for Amy - and anyone else who is interested - Walking Tacos!!! We sell walking tacos at the school snack shack for fundraising. I'll give you a quick lesson. We use the small bags of doritos & cut the side open. Then crunch up the doritos in the bag:
Put taco meat right into the bag on top of the chips:
then Olives, onions (whatever you like on tacos)
Sour cream on top
And you have a walking taco. Use a plastic fork, and the dish duty is great - throw it all away. We have sold them at the football & basketball games for a long time. My sister-in-law decided they would be good for the family reunion and then we had them last Sunday at a family gathering. We have had them camping too. They work great for a crowd and the kids think it is fun! Enjoy!
Candy Corn Cake
Check this out - my cake is famous. My sis-in-law Jodie sells this fancy french cookware - DeMarle. I was playing around with it last year and made a cake for the ward party. I thought - "I should take a picture and send it to Jodie", so I did, and now my cake is famous - well not really, but kind of cool to see it on the websites!
